ABOUT Vegetable Pockets RECIPE

A delicious and scrumptious breakfast recipe, these vegetable pockets provide an energetic start to the day. These healthy pockets are loved by kids alike. Give them for breakfast or in their tiffin, these are going to vanish in minutes.

Ingredients Serving: 3

  1. 1 medium onion, chopped
  2. 1 green chili, finely chopped
  3. 2 cups veggies, chopped ( carrot, capsicum, peas, cabbage, corn)
  4. 1 tbsp ginger garlic paste
  5. 1/4 tsp turmeric powder
  6. 1 tsp coriander powder
  7. 2 tbsp coriander leaves, chopped
  8. Salt to taste
  9. For the crepes :
  10. 1 cup all purpose flour
  11. 2 eggs
  12. Salt
  13. Water

Instructions

  1. For the crepes : Whisk together all purpose flour, eggs, salt and water till dropping consistency. Batter shouldn’t be too thick nor very thin.
  2. For the stuffing : Heat oil. Add ginger garlic paste and sauté on high flame.
  3. Add chopped onions, green chilies and sauté well. Add chopped veggies and stir on high flame.
  4. Add turmeric powder, coriander powder and salt. Mix well. Add chopped coriander leaves and mix well. Switch off the flame.
  5. Heat a tawa and spread a layer of crepe. Place filling in the center. Fold from right and left & top and bottom. Add a tsp of ghee and roast on both sides till brown.
  6. Serve with tomato ketchup or chutney.
