ABOUT Quick Vegetable Pulao RECIPE

Pulao is a very famous dish in India and it is prepared with rice. There are many varieties of pulao, peas pulao, spicy veg pulao, however the one made here is without onion and garlic. This recipe is very easy to prepare as it doesn’t have too many ingredients and can be cooked quickly.

Ingredients Serving: 3

  1. Rice 1.5 cup
  2. Ginger chilli paste 1 tsp
  3. Mixed Vegetable 1/2 cup
  4. Bay Leaf 1
  5. Green Cardamom 1
  6. Big Cardamom 1
  7. Cloves 2
  8. Cumin seeds 1 tsp
  9. Turmeric 1/4 tsp
  10. Coriander powder 1 tsp
  11. Beaten Yogurt 1 tbsp
  12. Few Mint leaves
  13. Ghee 1 tbsp or any cooking oil
  14. Water 3 cups
  15. Salt to taste

Instructions

  1. Wash and soak the rice for 20 mins.
  2. Heat a pan and add ghee, then add cumin seeds, bay leaf, cardamom, big cardamom, cloves, let the fragrance develop then add the ginger-green chilli paste.
  3. Saute it, then add the vegetables along with turmeric powder, coriander powder, beaten yogurt and cook it till the vegetables become soft. Next add salt and few mint leaves which will enhance the flavor of the rice.
  4. Now add in the soaked rice and stir slowly so that rice doesn't break.Transfer it into a rice cooker bowl then pour in water and press the cook mode. Once the rice is cooked and fluffy.
  5. Before serving remove the bay leaves, cardamom, big cardamom and cloves.
  6. Serve it hot with Pickles and Raita.
