Ingredients to make Madeleines

  • flour- 1 cup
  • butter- 1/2 cup
  • eggs- 3
  • White sugar - 1/2 cup
  • Brown sugar - 2 tbsp
  • Baking powder - 1/2 tsp
  • Vanilla extract - 1 tsp
  • lemon zest - 1 tsp

How to make Madeleines

  1. Whisk the eggs and sugars together for atleast 5-8 minutes till it is fluffy and pale.
  2. Add the vanilla extract and whisk, then add the lemon zest.
  3. Sieve the flour and baking powder together, then fold it into the egg mixture in small batches.
  4. Melt the butter and cool it. Slowly fold the butter into the batter. Refrigerate it for 3-6 hours.
  5. Grease a madeleine mould with butter, then put dollops of the batter into these moulds.
  6. Bake them at 190 degrees celsius in a preheated oven for 8-11 minutes.
