ABOUT Eggless Whole Wheat Honey Orange Cake RECIPE

The greek honey cake prepared by soaking the wheat cake in honey syrup is soft, juicy and super moist. I have added a layer of jam and topped it with dessicated coconut which tastes like a bakery style honey cake. The orange gives a twist to the recipe and its healthy than a usual honey cake as it is prepared in whole wheat.

Ingredients Serving: 10

  1. Wheat flour 1 and 1/4 cup
  2. Baking Powder 1 tsp
  3. Baking Soda 1/2 tsp
  4. Condensed milk 1 cup
  5. Oil 1/2 cup
  6. Vanilla essence 1 tsp
  7. Orange juice 1/2 cup
  8. Lemon Juice 1 tsp
  9. Brown sugar 3 tbsp
  10. Orange zest 1 tsp
  11. For the Syrup:
  12. Water 1/2 cup
  13. Sugar 2 tsp
  14. Honey 1/4 cup
  15. For the topping:
  16. Mixed fruits jam 3 tbsp
  17. Sugar 1 tsp
  18. Desiccated coconut- as required

Instructions

  1. Preheat the oven to 180 degrees celsius.
  2. Take the wheat flour, baking powder and baking soda in a bowl and mix it well.
  3. In another bowl take the condensed milk and add the remaining items listed under the wet ingredients. Mix it well.
  4. Now add the flour into the wet ingredients and mix it gently without any lumps.
  5. Pour this into the 8 inch pan lined with parchment paper. Bake it for 30-35 minutes or until it's done.
  6. Meanwhile prepare the honey syrup by boiling water and sugar together until it becomes sticky. Once it becomes warm, add the honey and mix well. This is the honey syrup.
  7. For the topping, melt the jam in a pan by adding sugar. Mix it in a low flame for a minute.
  8. Once the cake is done, let it completely cool. Poke holes in the cake randomly and pour the honey syrup.
  9. Spread melted jam evenly on the top and sprinkle desiccated coconut on top.
  10. The yummy honey cake is ready to be served.
