Ingredients Serving: 6

  1. 1/2 Cup brown sugar
  2. 3/4 Cup granulated sugar
  3. 1 cup butter
  4. one egg
  5. 1 egg yolk
  6. 2 teaspoon Vanilla extract
  7. 3 cups flour
  8. 1/2 cup cocoa powder
  9. 3/4 teaspoon salt
  10. 1 teaspoon baking powder
  11. 2 cups chocolate chips


  1. Mix brown sugar, granulated sugar ,butter, egg ,egg yolk and vanilla in a large bowl until well mixed..
  2. Stir in flour, cocoa powder, baking powder and salt until blended. The dough should be soft and creamy.
  3. Divide dough into 3 equal portions and wrap each portion with plastic wrap and transfer to refrigerator. Let chill for 30 minutes.
  4. Unwrap the chilled dough and place on lightly floured work surface and roll out to about half inch thick.
  5. Sprinkle with half the chocolate chips on top of the first portion of rolled dough. Roll out the second dough and then set on top.
  6. Sprinkle with remaining chocolate chips on top and then set the final portion of the dough on top of that.
  7. Gently flatten with a rolling pin.
  8. You can fold the dough over itself and roll the cookies again if desired.These cookies do not rise very much so make sure your dough is the desired thickness of the final cookie.
  9. Now cut into 2 inch square with a sharp knife and set on a cookie tray with an inch apart.
  10. Bake at 350 degree centigrade for 13 to 15 minutes.
  11. Cool completely on a wire rack.
  12. Store in airtight containers to retain freshness.
