ABOUT Caramelized Plum Wheat Ice Cream RECIPE

Everyone Loves Ice Cream . Today i made ice cream with plum fruit and wheat flour , not used any corn flour or maida , wheat is very healthy to all . Wheat gives the creamy texture to ice cream . Kids loves candies . Today i present my ice cream with sugar candy , which is known as SPUN SUGAR or Caramelized . Crunchy munchy ... Cool cool ...

Ingredients Serving: 3

  1. For ice cream :-
  2. Milk 1/2 kg + 1/2 cup
  3. Wheat flour 2 tbspn
  4. Sugar 2-3 tbspn
  5. condensed milk 2 tbspn
  6. 1/4 tepn cardamom powder
  7. 1 tspn vanilla extract
  8. 1 cup plum puree
  9. 2 tbspn chopped plum pieces
  10. For Caramel :-
  11. Sugar 1/2 cup

Instructions

  1. For ice cream :-
  2. Put the milk into the heavy bottom pan and give a boil .
  3. Then add sugar , stirr until the sugar dissolve. Cook for 10 minutes on slow flame .
  4. Meanwhile make flour slurry , add wheat flour into half cup milk and mix well . Make sure lumps are not remain .
  5. Add condensed milk into flour slurry and mix well .
  6. Now add this slurry into boiling milk slowly slowly and quickly mix well, otherwise lumps will become .
  7. Cook for next 10 minutes on low flame , stirr continued.
  8. Our milk become thick consistency. Then mix cardamom powder and switch off the gass .
  9. Keep aside for some cool down .
  10. When milk cool down then blend it for 2-3 minutes with hand blender or mixture .
  11. Now transfer into airtight container and kept into freezer for 2 hours .
  12. When ice cream mildly frozen then take out from freezer . And blend again for 2 minutes . Thus process gives creamy texture to ice cream .
  13. Now add vanilla extract and 1/2 cup plum puree and mix .
  14. At last add some chopped pieces of plum and transfer again into airtight container . And kept into freezer for frozen . At least 6-8 hours .
  15. Our plum ice cream is ready after frozen .
  16. For Caramel :-
  17. Take a heavy bottom pan add sugar and put on the gass and cook on low flame . Don't stirr
  18. When sugar starts caramelized from below then lightly stirr with fork .. no over stirr
  19. When all suger dissolve, and it's colour changed , looks like amber then off the gass . Immediately off the gass. Otherwise it will become bitter in taste .
  20. Let it slightly cool
  21. Now make any shape/nest with this .
  22. For nest - take a big vessel , and dip two forks into caramelized sugar and make thread quikly on vessel
  23. Then immediately fold .
  24. Our Crunchy Caramelized Nest is ready .
