ABOUT AMRITSARI ALOO KULCHA RECIPE

It is very popular breakfast in North India. It is very easy to make.Follow some simple steps and enjoy this delicious recipe at home.

Ingredients Serving: 4

  1. 2 cup maida/all purpose flour
  2. 1 tsp oil
  3. water for kneading dough
  4. For the masala -6 boiled potatoes
  5. 1 chopped onion
  6. 1/2 tsp red chilli powder
  7. 2 tsp chole masala
  8. 2 tsp garam masala
  9. 1 tsp anar dana/pomegranate seeds
  10. Salt to taste
  11. Chopped Coriander leaves
  12. For chole-
  13. 2 cups Chickpeas
  14. 4 onions- make into a paste
  15. 5 tomato pureed
  16. 1 tsp ginger garlic paste
  17. 1 tsp red chilli powder
  18. 2 tsp chole masala
  19. 1 tsp amchur / dry mango powder
  20. 1 tsp garam masala
  21. 1 tsp jeera/cumin seeds
  22. 1/2 tsp saunf / fennel seeds
  23. 1 tsp garam masala
  24. Salt to taste
  25. Few ginger pieces
  26. Chopped coriander leaves

Instructions

  1. Take a bowl, add maida, oil and little water at a time to knead a dough. Make small balls, keep aside.
  2. Now take a bowl add potatoes and all masalas in it, mix it well.
  3. Roll out balls with rolling pin and make roti, fill this with the stuffing in it, and again roll it...make kulcha on tawa...
  4. Spread butter or ghee...it's ready.
  5. Soak chole for 3-4 hours, then boil it with ginger pieces.Let boil for 5-6 whistles, after pressure drops, check it and turn off gas.
  6. Take pan heat oil add ginger garlic paste & jeera, when it crackles then add onion tomato paste and all left masalas....mix it well and stir it continuously.
  7. When it's leaves oil.add boiled chanan and boil...when gravy gets thick it's ready, sprinkle pomegranate seeds and coriander leaves on top. Coriander leaves.
  8. Ready to serve with kulcha.
