Ingredients Serving: 2

  1. Bharta Baingan 1
  2. Green peas 1 cup
  3. Onion 2
  4. Tomatoes 2
  5. Coriander powder 2 tsp
  6. Red chilli powder 1 tsp
  7. Turmeric powder 1/2 tsp
  8. Ginger garlic paste 1 tbsp
  9. Cumin powder 1 tsp
  10. Salt 1 tsp
  11. Coriander leaves 2 tbsp

Instructions

  1. Roast brinjal in direct flame.
  2. Remove skin once cold.
  3. In a pan heat oil.
  4. Add ginger garlic paste and saute for 1 min
  5. Add chopped onion, green chilli.
  6. Then add chopped tomatoes
  7. Cook till tomatoes are mushy
  8. Now add coriander powder, cumin powder, red chilli powder, turmeric powder
  9. Cook for 2 mins on low flame.
  10. Add mashed roasted brinjals.
  11. Season with salt.
  12. Cook for another two min in low flame.
  13. Turn off heat and garnish with chopped coriander leaves
