ABOUT Pahadi chicken masala RECIPE

Pahadi chicken is very famous in himachal pradesh .

Ingredients Serving: 4

  1. 500 gram chicken
  2. 1/2 cup curd
  3. 1/4 cup milk
  4. 1/2 spoon whole garam masala
  5. Salt as per taste
  6. 1/2 spoon turmeric
  7. 2 spoon chopped coriander leaves
  8. 4 spoon oil
  9. For masala - 2 big onion chopped
  10. 5-6 garlic
  11. 1" ginger
  12. 2 clove
  13. 2 spoon coriander seeds
  14. 1" cinnamon
  15. 1 spoon fennel seeds
  16. 2 clove
  17. 1/4 spoon black pepper
  18. 2 green chilli chopped

Instructions

  1. Heat 2 spoon oil in a wok.
  2. Once the oil is heated add cloves, cinnamon and allow it to fry for few seconds.
  3. Add coriander seeds, fennel seeds, garlic, ginger and saute till soften .
  4. Now add chopped onion and saute till onions turn translucent and brown.
  5. Allow it to cool down and grind the fried onion mixture to a smooth paste.
  6. Now heat the same pan with remaining oil , add chicken pieces and saute them.
  7. Add salt and turmeric, fry till the chicken turn golden brown.
  8. Take the chicken out and in the same oil put whole garam masala and allow it the aroma to release for few seconds.
  9. Add onion paste and saute for 4-5 minutes.
  10. Now add fried chicken , curd, milk and mix well.
  11. Cover it and cooked for 10 -15 minutes on midium flame.
  12. Finally add coriander leaves and switch off the flame.
  13. Serve hot with jira rice, naan or tanduri roti
