When we talk about koftas people generally think about paneer,potato or bottle gourd but today i have tried making red pumpkin koftas.Most of the people generally don't like pumpkin but if you cook it in this way everyone loves it.So lets begin:

Ingredients Serving: 4
Yellow pumpkin-500grams
Grated paneer-100grams
Boiled&grated potatoes-2
Gram flour-4tbsp
Salt to taste
Black pepper powder-1/2tsp
Oil for deep frying
For gravy:
Grated onion-2
Roughly chopped tomato-4
Beaten curd-3tbsp
Cashew almond paste-4tbsp
Salt to taste
Ginger paste-1/2tsp
Green chilly paste-1/2tsp
Red chilly powder-1/2tsp
Coriander powder-1tsp
Turmeric-1tsp
Sugar-1tsp
Milk-100ml
Oil-2tbsp
Water as per requirement
Freshly chopped coriander
Instructions
Wash pumpkin under running water and deseed it.Gently peel off the skin with the help of sharp knife.Grate it in a bowl.
Heat a non stick pan and add grated pumpkin to it.Stir continuously and cook on medium low flame till all the moisture evaporates.
Transfer in a bowl and keep aside for 10 minutes to cool down completely.
Take another bowl and add grated paneer,grated potato and gram flour to it.Mix thoroughly.Add salt,black pepper and grated pumpkin to it.Mix well.
Grease your palms with water and take a big lemon size portion from the mixture.Roll gently with the help of your both palms and shape it into a crack free kofta.Prepare other koftas like this only.
Heat oil in a wok.Fry koftad in a mediym hot oil till golden in colour.Drain on absorbent paper and keep aside.
For gravy,heat 2tbsp of oil in a woj.Add grated onions to it.Stir continuously and cook on medium flame till onions get dark brown in colour.
Meanwhile grind tomatoes in a mixer jar and transfer in a bowl.
When onions get dark brown in colour add tomato puree,ginger paste and green chilly paste to it.Mix well.
Add beaten curd,sugar and all spices.Stir quickly.Cook on medium flame till all the fat separates.
Add cashew almond paste and stir quickly to avoid lumps.
Add milk and check the consistency of gravy.If required add water to it.
While serving,arrange koftas in a bowl and pour gravy on it.Garnish with fresh coriander and serve!!
