ABOUT Dhaba Style Mutton Curry RECIPE

Dhabas of North India are best known for the rich and buttery dishes they serve. Among all the varieties of those veg and non-veg dishes, one which is very famous, is Dhaba Style Mutton Curry. Often found in the road side food joints of Punjab, this mutton curry has blast of flavours in it. Filled with the aroma of butter, with a dash of kasuri methi, this dish is best served with roti or naan. I have used pressure cooker to prepare this dish.

Ingredients Serving: 4

  1. Mutton 500 gm (curry cut, with bones)
  2. Yogurt 1 cup (whisked)
  3. Lime juice 1 tablespoon
  4. Garlic cloves 10 nos.
  5. Ginger 1 no. (1 inch)
  6. Green chillies 5 nos. (roughly chopped)
  7. Onion 1 no. (finely chopped)
  8. Tomato 1 no. (finely chopped)
  9. Cinnamon stick 1 no. (1 inch)
  10. Cardamom 4 nos. (crushed)
  11. Star anise 1 no.
  12. Nutmeg 1 no. (crushed)
  13. Bay leaves 2 nos.
  14. Cumin seeds 1/2 teaspoon
  15. Cumin powder 1 teaspoon
  16. Coriander powder 1 teaspoon
  17. Turmeric powder 1 teaspoon (1/2 + 1/2)
  18. Kashmiri red chilli powder 1/2 teaspoon
  19. Garam masala powder 1/2 teaspoon
  20. Oil (any) 4 tablespoon
  21. Butter 2 tablespoon
  22. Warm water 1.5 cup
  23. Salt, according to taste
  24. Kasuri methi 1 handful

Instructions

  1. Take garlic, ginger and green chillies together and make a fine paste. Keep aside.
  2. Clean the mutton and marinate with ginger-garlic-chilli paste, yogurt, lime juice, cumin powder, coriander powder, 1/2 teaspoon turmeric powder, garam masala powder, 2 tablespoon oil and 1/2 teaspoon salt. Keep aside for 2 to 3 hours.
  3. Heat the remaining oil in a pan and temper with cumin seeds and bay leaves. Allow them to splutter.
  4. Now, add chopped onion and sautè until it turns light golden.
  5. Add chopped tomato, turmeric powder and Kashmiri red chilli powder. Sprinkle some water and stir until the tomato becomes mushy.
  6. Now, add the marinated mutton and stir until the mutton and the mixture start separating from the oil.
  7. Add desired salt and water. Give a quick mix.
  8. Cover the lid of the pressure cooker and cook for 6 whistles.
  9. Once the pressure cools down, open the lid and keep cooking it on low flame.
  10. In a separate small pan, heat butter and temper with cinnamon, cardamom, star anise and nutmeg. Allow them to splutter.
  11. Turn off the flame and immediately pour the tempered butter on the cooked mutton.
  12. Now, add kasuri methi and give the curry a proper mix.
  13. Turn off the flame, cover the lid loosely and let it rest for 10 minutes. Your Dhaba Style Mutton Curry is ready to be served now.
