ABOUT Soofiyani Murg Pulao RECIPE

A mild yet very flavourful pulao, this is my absolute favourite pulao recipe.

Ingredients Serving: 2

  1. Chicken- 500 gm
  2. Basmati rice- 1.5 cup
  3. Ginger-Garlic paste- 2 tsp
  4. Sliced onion- 1
  5. Elaichi- 2
  6. Cinnamon- 1
  7. Cloves- 2
  8. Peppercorns - 10
  9. Tejpatta/Bay Leaf- 1
  10. Green chilli paste - 2 tsp
  11. Lemon juice - 2 tbsp
  12. Curd- 3 tbsp
  13. Khoya- 1/4 th cup
  14. Salt as per taste
  15. Milk 1/4 cup
  16. Ghee/ Refined oil

Instructions

  1. Heat ghee/oil in a kadhai, add the whole garam masalas followed by the sliced onion.
  2. Once translucent in colour, add the ginger-garlic paste and chilli paste.
  3. Add the chicken pieces and fry it, then add the curd, khoya and stir it well. Then add the salt and lemon juice.
  4. While this is cooking, boil the rice in a mixture of milk, water and salt.
  5. Then strain the rice and add it to the chicken. Close the lid and cook it on a low flame for 15 minutes. Let it rest and serve.
