Ingredients Serving: 4
For kulath daal:
Kulath daal-200grams
Chopped onion-1
Chopped tomato-1
Hing-1/8tsp
Cumin seeds-1tsp
Salt to taste
Red chilly powder-1/4tsp
Chopped green chilly-1
Grated ginger-1tsp
Coriander powder-1tsp
Turmeric-3/4tsp
Pure ghee-1tbsp
For Mandua roti:
Mandua aata-300grams
Wheat flour-100gram
Pure ghee for roti
Salt to taste
Instructions
Wash kulath daal under running water and soak it for 4-5 hours.
Transfer this daal in pressure cooker along with water.Add more water if required.Add salt and turmeric to it and close the lid.
Pressure cook the daal till you hear 4 whistles.Simmer the gas and cook for another 30 minutes.Turn off the gas and let the pressure release naturally.
Meanwhile prepare the dough for mandua roti.
Take mandua flour and wheat flour in a bowl and add salt to it.Add water little by little to knead the dough.
Knead into a semi soft dough.Cover with a cloth and keep aside.
Heat ghee in a pan and add hing to it.Saute for a second and add cumin seeds to it.
Saute for few seconds add chopped onion to it.Saute on medium flame till they get light brown in colour.
Add chopped green chilly,grated ginger and tomatoes to it.
Cook on medium flame till the tomatoes get mushy and fat separates completely.
Add coriander powder and red chilly powder.Mix quickly and add kulath daal to it.
Gently mash the daal with the help of blender to thicken it and to get the right texture of the daal.Kulath daal is ready.
Now for making rotis,take a medium guava size portion from the dough and roll it between your palms.
Gently press it and dust some flour on rolling board.Put dough on rolling board and make roti with the help of your hand same as makki ki roti.
Heat tawa and put roti on hot tawa.Cook on medium heat from both the sides.
Hold the roti with a tong and cook from both sides till nicely browned.
Apply ghee on top.
Transfer in serving plate.Serve with kulath daal and salad.
