ABOUT Bitter gourd curry RECIPE

This dish is a simple curry, an accompaniment for any rice item. It is slightly special and different in the sense that it is less bitter but spicy with the addition of two ingredients and in the way it is prepared. This is an Andhra special.

Ingredients Serving: 3

  1. Bitter gourd 500 gms
  2. Gram flour/Besan 2 tbsp
  3. Cumin/ Jeera 2 tsp
  4. Red chilli powder 2 tsp
  5. Oil 2 tbsp
  6. Turmeric powder/ Haldi 1/2 tsp
  7. Asafoetida/ Hing powder 1/4 tsp
  8. Salt to taste

Instructions

  1. Cut the karela/bitter gourd into thin long pieces.
  2. Add 2 tsp salt, mix it well and keep aside for a minimum of 30 mins. Squeeze and rinse it well under cold running water and discard the seeds if any.
  3. Heat oil in a heavy bottom kadai/pan and add the karela pieces. Saute on a medium flame till it is cooked. Stir occasionally till all the pieces turn light brown and are evenly fried.
  4. Make a powder form of the cumin. Also dry roast the besan/gramflour in a hot pan on low flame while taking care not to burn the flour.
  5. Remove and mix it well with the chilli powder, cumin powder and hing. Add this powder to the cooked karela in the pan and saute.
  6. Keep stirring for a while and add little salt as required for the powder. Mix it and remove.
  7. Serve it with rice.

A new concept for me. As in Bengal bitter gourd is just fried or otherwise cooked. In this recipe I used sattu instead of roasting besan. It came out well. Thanks
