To prepare the lasagne sheets, in a mixing bowl, mix together the flour and salt.
In another small bowl, break the eggs and beat them well. Now pour the beaten eggs, with the help of a fork work it into the flour. Mix together to form a soft dough, then close the bowl with a lid and let it rest for at least 30 minutes.
After 1 hour, divide the dough into 4-5 ping pong sized balls. Use flour to dust a work surface and roll out the balls into thin sheets as much as you can manage. (you can cut them using a pizza cutter or a sharp knife into strips of rectangle or square as you get in the shops.)
Arrange the rolled out sheets onto a big plate, one next to the other till you complete rolling out all the balls and keep the plate covered with a cloth or plate at all times to prevent the sheets from drying out.
Boil plenty of water in a large bowl, then add salt and 1 tbsp oil to it. Add the lasagne sheets to the boiling water one at a time, cook it uncovered and string occasionally for 8-10 mins.
Drain it immediately and transfer it into cold water, then drain once again and keep aside.
To prepare the tomato sauce, blanch 4 large tomatoes, then peel, deseed and chop them finely.
Heat olive oil in pan, add in 2 tsp of chopped garlic. Saute it and add in the mixed herbs.
Next, add the chopped tomatoes, 2 tbsp tomato sauce, salt and cook it for 4-5 minutes. Then add 1 tbsp of fresh cream and 1 tsp of mix herbs. Mix it well together, the sauce is ready.
To prepare the mixed vegges, take a pan and heat oil in it, add the onion and saute for 3-4 mins. Then add the vegetables, salt, chilli flakes, mixed herbs and cook till it's tender.
Grease the baking dish and spread little sauce in the pan.
Place the lasange sheet over it and spread some sauce, then spread 1 portion of the cooked veg and add the mozzarella cheese.
Repeat this process with the remaining sheets, sauce and vegetables. Finish it off with the tomato sauce and cheese as the last layer.
Bake it in a preheated oven at 180 degrees for 20 mins. Cover the dish with a foil, after 20 mins, remove the foil and cook it for another 15 mins.
Serve it warm.
