Hi i made this beautiful recipe in a dhaba style by roasting the brinjals on gas burner.please like

Ingredients Serving: 4

  1. 1/2kg brinjals
  2. 1 spoon salt
  3. 1 tsp turmeric
  4. 1 spring onions chopped
  5. 1 lemon juice
  6. 1 spoon chopped fresh corriander
  7. 1tsp cumin seeds
  8. 2 tsp garam masala
  9. 3 chopped onions
  10. 2tsp ginger garlic paste
  11. 2 spoon pure desi ghee

Instructions

  1. Turn on the gas burner and put one brinjal on one burner
  2. Now peel the skin of the brinjals and put them aside
  3. Heat oil in a wok,add some oil/ghee ,now add cumin seeds and ginger garlic paste
  4. Now add onions,spring onions white part and saute
  5. When onions get translucent,add tomatoes and saute for another 2mins
  6. Now add turmeric,garam amsala,salt pepper and saute for a minute
  7. Now add the peeled roasted brinjals and mash them with back of the laddle
  8. Now cook by covering up foe about 5 mins
  9. Now serve hot by garnishing with corriander and spring onions
