Ingredients Serving: 4

  1. potatoes 2
  2. curd 1 cup
  3. rice 2cups
  4. Soya chunks 1/2 cup
  5. coriander leaves 1/4 cup
  6. mint leaves 1/4 cup
  7. saffron pinch
  8. Milk 1 tsp
  9. oil 2 tbsp
  10. ghee 1tbsp
  11. salt
  12. Whole garam masala
  13. Green chillies 5no's
  14. dhania powder 1/2 tsp
  15. Kashmiri red chilli powder 1/2 tsp
  16. water
  17. Garam masala powder
  18. lemon juice(optional)


  1. Wash the rice and soak for half an hour
  2. Heat the heavy bottomed pan and add oil. When oil gets heated add whole garam masala and green chilles.
  3. When chillies start to splutter add in cubed potatoes
  4. Give it a stir and after 5 min add soaked soya chunks and let it cook for 5 to 6 min
  5. Mean while to prepare rice take 5cups of water in a vessel and allow it to boil. Once the water starts boiling add whole garam masala n 2 green chillies and 1/2 spoon salt.
  6. Now add soaked rice to the boiling water and allow it cook upto 80%
  7. Here in the pan add turmeric, salt, kashmiri red chilli powder and mix well
  8. After some time add garam masala powder and some jeera powder and add curd to it and keep on stirring in order to avoid curd from curdling
  9. Add half quantity mint leaves and coriander leaves give it a stir
  10. Once all the ingredients are cooked well add the half cooked rice on top of the potatoes mix
  11. Now add left over mint and coriander leaves on the top of the rice and also add the saffron soaked in milk.
  12. Now close the lid of the pan and allow it to steam cook for 20min
  13. After the veg biryani is prepared add a table spoon of ghee on the top of the rice which adds taste to rice
  14. Veg biryani is served hot with raita and salad.
