Mutton rogan josh is an authentic kashmiri goat meat curry, infused with saffron, curd and other exotic spices. This warm and comforting curry goes well with rice, roti and naan.

Ingredients Serving: 2

  1. 500 gms Mutton (bone-in)
  2. 2 tbsp ghee
  3. 3 Nos. Black cardamom
  4. 2 tsp Kashmiri chili powder
  5. 1 tbsp Fennel seeds powder
  6. 1 tbsp ginger paste/powder
  7. ¼ Cup curd
  8. As required salt
  9. ½ tsp asafoetida
  10. ½ tsp turmeric powder
  11. ½ tsp turmeric powder
  12. To grind
  13. 2 strands mace
  14. 5 Nos. Green cardamom
  15. 2 inch stick cinnamon
  16. 1 tsp cumin seeds


  1. Clean the meat thoroughly and keep aside.
  2. Heat a heavy bottomed pan, add ghee, once it is hot enough, add black cardamom and sauté. Now add meat pieces and let it fry until it has light brown spots.
  3. In a small bowl add kashmiri chili powder, fennel seeds powder, ginger paste/powder, turmeric powder, salt, asafoetida, saffron and curd along with 2 tablespoons of water and make a thick paste.
  4. Add this spice mix to meat and cover the meat with enough water and let it cook for 30 minutes.
  5. Meanwhile in a blender/mixer add cinnamon, green cardamom, cumin seeds and mace strands, grind to a fine powder.
  6. Add this spice powder to the half cooked meat and mix well.
  7. Cook this for about 40 minutes or until the meat is completely cooked and spices were well infused. Mix at every 10 minutes to avoid sticking at the bottom. The curry was reduced to half on cooking.
  8. Now the Mutton rogan josh is ready! Serve hot with roti, naan or hot rice.
