ABOUT Lucknowi motton yakhni pulao RECIPE

Lucknowi motton yakhni pulao is a traditional pulao recipe in which long grain basmati rice is cooked eith aeromatic motton stalk called yakhni, meat snd saffron. This is the signature dish of Lucknowi nababs and also popular among UP as well as in North India.

Ingredients Serving: 3

  1. To make yakhni ( potli)
  2. 1 tsp cumin seeds
  3. 1 tsp fennel seeds
  4. 1 tsp coriander seeds
  5. 3 green cardamom
  6. 3 cloves
  7. 1 inch Cinnamon
  8. Pinch of nutmeg
  9. 1 star anise
  10. 1 onion cut into cube sized
  11. 8-10 cloves of garlic
  12. 1 inch ginger
  13. For yakhni pulao:
  14. 300 gm motton
  15. 150 gm long grain Basmati rice
  16. 2 onion roughly chopped
  17. 2 bay leaves
  18. 2 green chilli
  19. 8-10 strands of saffron
  20. 1/4 cup milk
  21. 1/2 cup curd
  22. Salt as per taste
  23. 5-6 tsp ghee
  24. 2 cup Water
  25. 1/2 tsp turmeric powder ( optional)
  26. 1 tsp chilli powder
  27. 1 tsp meat masala powder ( optional)
  28. 1 tsp Garam masala powder
  29. 1 fried onion ( for garnishing)
  30. Some chopped coriander leaves ( for garnishing)

Instructions

  1. Wash and soak the rice in water for 30 minutes.
  2. Soak the saffron strands in milk.
  3. Wash the Motton pieces.
  4. Assemble all the ingredients for the potli and tied them firmly.
  5. Pressure cook the motton with water, salt with the potli up-to 2 whistles in low flame.
  6. Discard the potli and carefully remove all the Motton pieces.
  7. Heat a pot or kadai and put ghee in it.
  8. Then add the bay leaves, chopped onion and chilli in it.
  9. When the onion become translucent then add the motton pieces in it and mix it well.
  10. Add beaten curd and salt in it.
  11. Mix it well and add the rice in it.
  12. Then add turmeric powder, chilli powder and meat masala in it. But this step is optional.
  13. Add the yakhni stalk in it and mix it well.
  14. Cook the rice in high flame till they become 90% cooked and then add the saffron milk and Garam masala in it.
  15. Then cook it in low flame for 15 minutes.
  16. Now your yakhni pulao is ready and then garnish with fried onions and chopped coriander leaves.
  17. Now your Lucknowi motton yakhni pulao is ready to serve . Serve hot with raita.
