Aloo Gobhi Masala

Ingredients to make Aloo Gobhi Masala

  • 2-3 potatoes
  • 1 cauliflower
  • 1 onion
  • 1 tomato
  • 2 cloves of garlic
  • A piece of ginger
  • 1 green chilli
  • A pinch of hing
  • 1 tsp cumin seeds
  • 1/4th tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp kashmiri mirch/degi mirch
  • salt to taste
  • 1/2 tsp garam masala
  • A pinch of kasuri methi
  • 1 cup water
  • 1 tbsp oil

How to make Aloo Gobhi Masala

  1. Wash and chop the potatoes and cauliflower. Then blanch the cauliflower pieces in salted water (to get rid of any worms, etc.)
  2. Take a wok and heat oil in it, add the chopped potatoes and cauliflower.
  3. Cover it and cook on a medium flame for about 4-5 minutes or till it comes soft. Stir it in between softly so that the bud does not break.
  4. Turn off the stove and put it on a plate. (Do not overcook this.)
  5. Grind the onion, tomato, green chilli and ginger-garlic together. Keep it aside.
  6. Heat the same wok and add a little oil, then add the hing/ asafoetida and cumin seeds. As it starts crackling, add in the grounded paste and cook for a minute.
  7. Saute it well and add all the dry masalas. Let this cook for a minute.
  8. Pour in a little water so that all the masalas mix properly. Then add in the aloo gobhi, mix it properly but softly.
  9. Cook for a minute, all the masalas should get mixed properly with the vegetables.
  10. Sprinkle kasuri methi on top and serve it.

My Tip:

You can make this recipe without onion and garlic, so you can add soaked cashews with tomatoes, green chilli and ginger instead.
