It is tea time snack in Kashmir ,very crispy and lightly sweetie , easy to make at home.

Ingredients Serving: 8

  1. 2 cups all purpose flour ( maida)
  2. 1/2 cup clarified butter
  3. 1/2 cup powdered sugar
  4. 1/2 tea spoon active dry yeast
  5. 1/4 tea spoon baking powder
  6. 1/8 tea spoon salt
  7. 1 whole egg
  8. 1 egg whites
  9. 1 tea spoon cardamon powder
  10. To brush
  11. 1 egg yolk
  12. 1/8 tea spoon yellow food colour
  13. 1 tea spoon sesame seeds


  1. Keep handy all the ingredients
  2. In a bowl beat the clarified butter , sugar , 1 whole egg and the egg whites till you get a smooth mixture
  3. Add the cardamon powder into it
  4. In a large bowl put the maida and add salt and yeast and mix it thoroughly
  5. In a bowl beat the egg yolk and the food colour
  6. Now add the liquid mixture gradually into the maida and knead it
  7. Cover the bowl with cling film and keep aside for one hour
  8. Preheat oven in 200 degree celsius for 10 minutes
  9. Now take small portion from the dough , make peda and flatten it in the palm
  10. Line the baking tray with burger paper and keep the kulchas on it
  11. Brush it with egg yolk mixture and sprinkle some sesame seeds on each kulcha
  12. Bake for 15 minutes at 180' celsius and then at 200 degree for 5 minutes
  13. Keep it on cooling rack for some time and the tasty kashmiri Kulcha is ready to serve with hot cup of kahwa
