ABOUT Gajrela with Kesar Kulfi RECIPE

Gajrela means the famous kulfi served in cups made from Gajar. This is a very popular dessert in Northern India during the winter and spring months when dark red carrots are in season. Carrots are slow cooked with milk until they reduce to a tender fudge like consistency. I am sharing my moms very easy Gajar Halwa recipe with more easy but unbelievably tasty kulfi recipe here. Do try this North Indian delicacy in your home for your lived ones.

Ingredients Serving: 6

  1. Gajrela; 1 kilogram carrots
  2. 300 mk condensed milk
  3. 1/2 to 3/4 cup sugar
  4. 1/2 cup ghee, divided
  5. Kulfi; 500 ml raw, full fat milk
  6. 1/2 cup condensed milk
  7. 1/4 cup mill powder
  8. 1/2 teaspoon cardamom powder
  9. One pinch kesar
  10. Garnishing; Some chopped pistachio
  11. Some kesar strands (optional)

Instructions

  1. Gajarela; In a pan add ghee and roast cashews and raisins. Remove in a plate and set aside.
  2. In the same ghee add the grated carrots and saute till all the carrots are well coated in ghee.
  3. Add condensed milk and mix well
  4. Add whole fat milk and mix
  5. Add sugar and mix well. Add freshly ground cardamom.
  6. Cook until all the liquid is absorbed and the halwa is quite dry and thick. Or else we will not be able to make cups out of it
  7. Once done cool completely add fried cashews and raisins
  8. Kulfi; add milk, milk powder, condensed milk and sugar in a pan and heat by stirring continuously.
  9. Add cardamom and kesar. Bring to a boil
  10. Then cook for 10 minutes on low flame. Until the mixture looks little thicker. Add chopped pistachios.
  11. Cool the mixture and pour in an freezer safe container. Cling wrap and freeze overnight or atleast 4-5 hours.
  12. Cling wrap the inner part of muffin cups and spread cooled carrot halwa, so it looks like a cup. Do this for all the cups you want to prepare.
  13. Refrigerate the muffin cups with halwa till you serve them. Remove the gajrela from muffins cups with help of cling wraps.
  14. Before serving, scoop out a serving of kulfi and place in the prepared gajrela cups . Decorate with pista and kesar.
