Ingredients Serving: 2

  1. brown rice 3/4 cup
  2. shredded raw mango 1/2 cup
  3. grated carrots 1/2 cup
  4. mustard seeds 2 teaspoon
  5. Chana dal - 1 tbsp
  6. chopped green chilies 1tbsp
  7. cashewnut 10 pieces
  8. curry leaves about 15
  9. asafoetida 1 tsp
  10. turmeric powder 2 teaspoon
  11. dry Red Chillies 2
  12. oil 2 tbsp
  13. salt as per taste


  1. Cook rice and keep aside. To make this preparation healthy, here I have used brown rice. This rice takes more time to cook than normal rice.
  2. In a pan take oil, heat on medium flame. Add mustard seeds.
  3. When mustard starts to crackle add curry leaves, dry red chillies and asafoetida. Saute for about 30 seconds.
  4. Now add green chillies, chana dala, cashew nuts. Saute these until they turn lightly golden brown.
  5. It's time to add the raw mangoes and carrots. Cook them till the mangoes turn soft.
  6. At this point add turmeric powder and salt as per taste. Mix and cook well.
  7. Now it's time to mix the rice into this. Stir and mix all ingredients very well. Cover and cook for 1 minute.
  8. Yummy Mango carrot rice is ready, add some fresh coriander leaves. Serve hot with pickle.
