ABOUT Jackfruit pineapple semolina cake RECIPE

In western coast of Maharashtra (konkan,,Goa,Karwar) ripe Jackfruit is a seasonal fruit. Pineapple is available through out. So there is no wonder that lots of recipes revolve round these fruits( Mango ofcourse,even if it is not used in this recipe. In konkani it is called Dhondas

Ingredients Serving: 4

  1. Jackfruit and pineapple pieces 2 cups
  2. Roasted rava (sooji)2-3 cups
  3. Curd 1/2 cup
  4. Jaggery(gud)grated 2cup
  5. Sugar 1 cup
  6. Ghee 2 tsp
  7. Baking powder 1/2tsp
  8. Salt a pinch

Instructions

  1. Grind together fruit pieces,gud, sugar ,ghee and curd to a fine paste
  2. Remove in a bowl.
  3. Add roasted semolina (rava), salt and baking powder and mix well
  4. Leave the mixture for 10 minutes
  5. After 10 minutes check if it is too dry
  6. Pour the mixture into it and level it with spatula
  7. Tap lightly to remove excess air
  8. Bake at 180 oC for 20 minutes in a preheated oven
