My native parangipettai ( Tamil Nadu) style very yummy delicious , everyone's favourite goes well with roti paratha ver easy recipe

Ingredients Serving: 7

  1. Onions 3 chopped
  2. Tomatoes 2 chopped
  3. Green chillies 3
  4. Turmeric powder 1/2tsp
  5. Red chilli powder 1tbsp
  6. Salt as required
  7. Ginger garlic paste 1tsp
  8. Coriander powder 1tbsp
  9. Coriander Leaves few
  10. Eggs 2-3
  11. Potatoes 1 (optional)
  12. Coconut milk 1 bowl

Instructions

  1. Heat oil in a pan add onions saute well by adding salt
  2. When onion turns translucent add ginger garlic paste saute well
  3. Add tomatoes ,green chillies and potatoes saute well
  4. Add turmeric powder,red chilli powder mix well until it becomes mushy
  5. Now add the coconut milk ,Coriander powder and coriander leaves
  6. Cover the lid and let it cook
  7. When the gravy boils drop the eggs and cover them let it cook until oil leaves in the gravy
  8. Serve hot with rotis and parathas
