Deep fried puris made from jackfruit pulp

Ingredients Serving: 5

  1. Jackfruit pulp 1 cup
  2. Jaggery 1 cup
  3. Coconut 2 tbsp
  4. Wheat flour 2 cups
  5. Rice flour 1/4 cup
  6. Salt a pinch
  7. Elaichi powder pinch
  8. Oil for frying

Instructions

  1. Take a heavy bottom pan. Add jackfruit pulp and jaggery to it. Keep it on low flame. Stir to avoid burning.
  2. Stir for 10 min or until jaggery dissolves. Turn off the flame.
  3. Now add wheat flour, rice flour, coconut, elaichi powder and salt.
  4. Knead to medium soft dough. Keep aside for 15 min.
  5. Heat oil in kadhai for frying.
  6. Now make small pedas out of the dough. Roll it into puri. Do not roll too thin. Keep slightly thick.
  7. Fry all puris till golden brown. Enjoy as evening snack or in kids tiffin box.
