Roasted Tomato-Onion and Capsicum Chutney

Ingredients Serving: 5

  1. Onions- 2
  2. Tomatoes- 2
  3. Green capsicum - 1
  4. Red chilli powder - 1 tsp
  5. Channa masala powder - 2 tsp
  6. Salt - to taste
  7. Sugar- a pinch
  8. Ginger, finely chopped - 2 tsp
  9. Garlic, finely chopped - 2 tsp
  10. Oil - 1 tsp
  11. Urad dhal - 1 tsp
  12. Mustard seeds - 1 tsp
  13. Dry red chillies - 2

Instructions

  1. In a pan, heat some oil and add the ginger and garlic.
  2. Roughly chop the onion, tomato and capsicum and add it to the pan. Let it cook for 2 minutes on a high flame.
  3. Add the red chilli powder, channa masala powder, sugar and salt. Then turn off the heat and let it cool for 10 minutes.
  4. Blend it into a fine paste.
  5. Heat oil in another pan, add the mustard seeds and let it crackle. Add the red chillies and urad dhal and let it fry.
  6. Add this tempering to the chutney and serve it with idlies or dosa.
