ABOUT Rajasthani Khoba Roti RECIPE

I always like to try new cuisines and challenge myself with any new recipe I come across. This roti I have been meaning to try for a long time now but kept putting off thinking it would be out of my league. But to my surprise, these rotis came out beautifully on my first attempt. Do try them, you will love them!

Ingredients Serving: 5

  1. 2 cups whole wheat flour
  2. 1 tbsp oil
  3. Salt to taste
  4. Water as per need
  5. Clarified butter (ghee)/ Butter as per need

Instructions

  1. Combine the flour with salt and oil. Rub it with fingers till it's crumbly in texture. Add enough water to form a semi-firm dough. Apply oil and knead well for 5 minutes till pliable. Cover and leave it to rest for 30 minutes at least.
  2. Heat a tawa/thick bottomed pan. Keep the flame low, make large-sized balls of the dough. Dip the ball in the flour and roll out thick round shapes (chapati).
  3. Apply ghee to the base of the chapati and place this side on the tawa.
  4. After 10-15 seconds, flip the chapati. With the help of blunt pinchers (pakkad) or clean forceps with blunt tips, pinch the surface of the chapati to create design all over, rotating the tawa for easy handling.
  5. Flip the chapati and cook on a medium heat for few seconds pressing it down gently and then roast the design side directly on the flame. If the underside looks uncooked, roast this side too (i.e. roast both sides).
  6. Remove from the flame and apply the ghee liberally. Serve it with Gatte Ki Sabzi.
