Ingredients Serving: 6

  1. whole wheat flour 2cups
  2. Semolina 2tbsp
  3. salt 1/2 tea spoon
  4. oil 2-3 table spoon for the dough
  5. oil for frying
  6. paneer crumbs or mashed potato 1 - 1/2 cups
  7. onion chopped 1
  8. tomato chopped 1
  9. green chillies 1-2 chopped
  10. coriander leaves 1handful chopped
  11. cumin powder 1 -2 tea spoon
  12. salt to taste
  13. tomato ketchup 2- 3tablespoon
  14. pepper powder 1-2 teaspoon
  15. ghee 1 tablespoon
  16. baking soda 1teaspoon
  17. red chilly powder 1teaspoon (optional)

Instructions

  1. For making the dough: take whole wheat flour, all purpose flour, salt and oil for the dough and knead into a perfect dough. Not to soft nor too hard. Cover and keep aside.
  2. Next for the filling: you can use paneer crumbs or mashed potatoes or both together. In oil first put the chopped onion, fry nicely, put the tomatoes chopped, green chillies, fry, next put the cumin powder, red chilly powder, salt and fry.
  3. As oil separates. Put in the paneer crumbs or mashed potatoes ...mix well, add chopped ,add pepper powder, tomato ketchup, coriander leaves mix well. Let it cool.
  4. Next from the dough take small portions.Roll them out in circles then put some ghee and sprinkle some flour and fold into half. Roll the half a little too.
  5. Next fold the half to make a triangle, roll the triangle little, heat the pan fry the paratha without oil on both sides
  6. As it cool you will find the lower part of the triangle can be opened like a pocket, fill it with your filling, then seal the sides by pressing them with wet fingers. Next fry it again in little oil.
  7. Your Paratha Pocket is ready, serve with sauce or chutney or pickle of your choice.
