Ingredients Serving: 5
1/2 kg potatoes, boiled and mashed
1/2 bunch spinach leaves, finely chopped
1/4 tsp asafoetida
4 tbsp coarsely grounded garlic-ginger and green chillies paste
1/2 tsp sugar
salt as per taste
1/2 tsp turmeric powder
oil for frying
Batter Ingredients:
1 cup besan/ chickpea flour
1/2 tsp turmeric powder
1 tsp chilli powder
salt as per taste
Instructions
Boil and mash the potatoes.
In a pan, heat 1 tbsp oil. Add the hing powder, garlic-ginger chilli paste, salt, turmeric powder, sugar and spinach leaves. Cook till it becomes dry. Mix the smashed potatoes with this mixture.
Make a batter by mixing the listed ingredients together.
Make balls of this potato mixture, dip them in the batter and deep fry these vadas.
Serve them hot for best taste.
