ABOUT Lentil with Lime Leaves RECIPE

A Bengali dal recipe of moong dal cooked with aromatic lime leaves.

Ingredients Serving: 4

  1. Skinned moong dal: 200 gm
  2. Ginger (finely chopped): 1 tbsp
  3. Green chillies: 3-4
  4. Cumin seeds: 1 tsp
  5. Turmeric powder: 1/2 tsp
  6. Lime leaves: 4-5
  7. Lime juice: 1-2 tsp
  8. Ghee: 1 tbsp
  9. Oil: 1 Tbsp
  10. Salt and sugar to taste

Instructions

  1. Dry roast the lentils in a heavy bottomed pan, till the lentils start to change color, take care not to burn them.
  2. Wash the roasted lentils till the water runs clear. Then cook the lentils in a pressure cooker.
  3. In a pan or wok heat the oil and ghee, once hot, add in the cumin seeds and cook till it turns brown in colour.
  4. Add in the green chillies, chopped ginger, cooked lentil and turmeric powder. Then add the lime leaves. (The leaves can be cut into thin strips or just roughly torn.)
