ABOUT Blueberry Cheesecake RECIPE

A biscuit base with a creamy custard topped with a blueberry sauce

Ingredients Serving: 4

  1. 6 cups Cream
  2. 2 cups Cream Cheese
  3. 1 cup Sugar
  4. 1 cup Digestive biscuits crushed
  5. 3/4 cup Milk
  6. 4 Egg yolks
  7. 3 tbsp Butter
  8. 2 tbsp Gelatin
  9. 2 tbsp Vanilla essence
  10. 2 tbsp Lime juice
  11. 1/2 cup Blueberry
  12. 1 tbsp gelatin
  13. 2 cups water

Instructions

  1. Mix biscuits with butter in a bowl, spread this evenly at the bottom of a pie dish.Refrigerate for an hour.
  2. Mix the cream cheese, vanilla essence and lime juice together in a bowl.
  3. Dissolve the gelatin with 1 1/2 cups of cold water. Keep aside.
  4. Boil milk in a pan.
  5. Mix egg yolks and sugar with a 2 spoons of milk. Pour this into the pan, stir constantly and cook over low heat until it thickens.
  6. Remove from heat and mix the gelatin. Let it cool
  7. Add this to the chesse mixture, folding gently.
  8. Whisk the cream until it becomes like thick and fold into the cheese mixture.
  9. Pour the cream cheese mixture on top of the pie disha and refrigerate until it becomes hard.
  10. Again dissolve the gelatin with cold water and mix with blueberry.
  11. Boil the mixture and let it cook.
  12. Pour this over the set cheesecake and refrigerate for an 30 mins before serving.

But this is not baked. I made mine by adding cream and sour cream.and more of cream cheese. I also used fresh cream paneer instead of cream cheese and used only gelatin and no egg.
