Ingredients Serving: 4

  1. 15-20 Leaves of arui (ghuiya)
  2. Besan 4 tbsp
  3. Onion and Garlic-Ginger paste 1 tbsp
  4. Coriander powder 1 tsp
  5. Turmeric powder 1/2 tsp
  6. Garam masala 1/2 tsp
  7. Red chilli powder 1 tsp
  8. Salt according to taste
  9. Heeng/ Asafoetida 1 pinch
  10. Rice flour 1 tbsp
  11. Mustard oil to fry

Instructions

  1. Wash the leaves thoroughly and cut off the stems.
  2. Take the besan in a bowl, add in the onion, ginger-garlic paste, salt, heeng, coriander powder, turmeric, red chilli powder and rice flour. Make a thick paste by mixing it with a little water. (Note that the paste must not be of a flowing consistency, it must be thick.)
  3. Take a big leaf and keep it upside down on a flat surface. Apply the besan paste all over it. Put another small slightly leaf over it and apply the paste again over it.
  4. Repeat this step and keep increasing the leaf size. Once 5-7 leaves are filled, roll the complete set into tight rolls. Fix them by using some toothpicks.
  5. Repeat these same steps for the rest of the leaves and making 2-3 rolls more.
  6. Boil these rolls in a pressure cooker. Let it cook for at least 10-15 mins on a low flame.
  7. Once done, cut the boiled rolls into thin slices. Roll each slice in the left over besan mixture and shallow fry on a frying pan in mustard oil until it is crisp.
  8. Serve it hot with green chutney.
