ABOUT Kuzhal Payasam/ Talikala Payasam/ Wheat Noodles Payasam RECIPE

Kuzhal payasam is a old traditional recipe prepared during any festival especially for vinayagar chathurthi. This has become a forgotten recipe as I don’t see anyone preparing it often. I got this recipe from my grandmother who prepared this for us when we were young. I wanted to prepare a very special recipe for this vinayagar chathurthi so I tried this delicious payasam. I would say the taste is outstanding and the best ever!

Ingredients Serving: 10

  1. Wheat flour 1 cup
  2. Jaggery 1 Cup
  3. Water 1 Cup
  4. Rice flour 2 tsp
  5. Cardamom powder 1 tsp
  6. Dry ginger powder 1 tsp
  7. Coconut milk 1/2 cup
  8. Grated coconut 1/3 cup
  9. Cashews 10
  10. Raisins 6
  11. Ghee 2 tsp
  12. Oil 1 tsp

Instructions

  1. Dissolve the jaggery in water or boil it until it dissolves. Then filter it to remove the impurities.
  2. Take the wheat flour in a bowl, pour in a little jaggery water to it and knead to form a smooth dough. Add a tsp of oil and knead it well again. Take a small ball of the dough and roll into noodle shapes with your hands. (If you want to make it quickly, then put the dough into murukku maker and make into small strips, then cut into small pieces.)
  3. Sprinkle a teaspoon of rice flour to the noodles to make it non-sticky and separate it from each other.
  4. Heat the remaining jaggery water again. (If you want, add a little water and the jaggery and bring it to a boil. No need of any consistency.)
  5. Then add the noodles to the boiling jaggery water and cook it covered on a medium flame for 10 minutes until it gets cooked.
  6. Next, add the cardamom powder and dry ginger powder to it. Stir it gently without breaking the noodles. Then add in the grated coconut and coconut milk. Stir and cook it for a few minutes.
  7. Sprinkle a teaspoon of rice flour and mix it well without lumps to make it thick. Once it becomes thick, remove it from the flame, add the cashews and raisins that have been fried in ghee.
  8. Mix well and let it become warm. Enjoy this delicious payasam!
