Ada Pradhaman is a traditional dessert made in Kerala. This recipe is a twist to the original one by adding Avocado. The naturally nutty flavored Avocado is cooked with milk, ada and sugar. The dessert is then finally garnished with cashew nuts and almonds.

Wash the readymade ada. Then boil the water and soak the ada for 15 minutes. Cover it with a lid.
Cut the avocados into halves, then twist and take out the pulp. Blend the avocado, milk and saffron in a mixer and make it of a liquid consistency.
Transfer the pulp to a cooking pan and add water. (In parallel, by this time the ada would have cooked in the water.)
Mix the avocado pulp and the ada, let it cook in a low flame. Continue stirring or the ada will get burnt.
When it starts to bubble, add sugar and keep stirring at regular intervals of 1-2 mins. Once it starts to boil add the cardamom.
Let it boil nicely for another 5-8 minutes. (The ada would be cooked by this time.)
Take a small frying pan and add the ghee. Once the ghee is melted, add the cashews and almonds. Let it fry and turn into a golden brown colour.
Pour this garnish on top of the avocado ada pradhaman.
