ABOUT Chicken Kalmi Kebab RECIPE

Kalmi Kebab calls always for chicken drumsticks, though chicken thighs make excellent, juicy, succulent and tender kebabs. Kebab lovers will definitely fall in love this meaty kebab, this kebab is a must if you want to try kebabs at home.

Ingredients Serving: 4

  1. 4 Chicken Legs
  2. First Marination:
  3. Salt as per taste
  4. 1 tbsp lemon juice
  5. 1/2 tsp red chilli powder
  6. Second marination:
  7. 3 tbsp curd
  8. 1 tbsp ginger-garlic paste
  9. 1 tbsp dry fenugreek leaves
  10. 10 mint leaves
  11. 1/4 cup coriander leaves
  12. 2 tsp kashmiri red chilli powder
  13. 2 tsp coriander powder
  14. 1/2 tsp garam masala
  15. 1/2 tsp cumin powder
  16. Salt as per taste
  17. 1 tbsp butter (melted)
  18. Few slices of onion rings to garnish

Instructions

  1. Clean and remove the skin of the chicken thighs. Make insertions using a knife on both sides of the chicken. Rub the chicken thighs with salt, lemon juice, chilli powder and keep it aside for 15 minutes.
  2. Now take the kasthoori methi, finely minced mint, curd, oil, finely chopped coriander leaves, kashmiri red chilli powder, garam masala, cumin powder, ginger garlic paste, salt and make a paste of it together.
  3. Apply this marination to the chicken on both sides and keep it in the fridge overnight. Preheat the oven to 350 F or 176 C. Line a baking tray with foil, place the marinated chicken thighs and bake it for 40-45 minutes by flipping the legs in between.
  4. Wrap the thighs with foil and spread the butter on the chicken.
  5. Serve the thighs garnished with onion rings.

Kalmi kebabs are never drum sticks. It is minced chicken made with bamboo kalam
