Ingredients Serving: 6

  1. 6 medium sized boiled and churned potatoes
  2. 4 tbsp ginger and garlic paste
  3. 1 tsp chopped green chillies
  4. A pinch of asafoetida
  5. 1 tsp red chilli powder
  6. 1 tsp turmeric powder
  7. 1 tsp chopped coriander leaves
  8. 1 tsp lemon juice
  9. Salt to taste
  10. Oil for cooking
  11. For batter: 250 gms gram flour
  12. 1 tsp turmeric powder
  13. 1 tsp red chilli powder
  14. A pinch of soda bicarbonate
  15. Salt to taste
  16. 15-18 pav, slit them gently
  17. For green chutney 250 gms coriander leaves
  18. 100 gms fresh mint leaves
  19. 1 tsp cumin seeds powder
  20. 2 tbsp lemon juice
  21. 2 green chillies
  22. Salt to taste
  23. For dry coconut chutney: 4 tbsp grated dry coconut
  24. 4 cloves garlic
  25. 2 tbsp red chilli powder
  26. 1 tbsp hot oil
  27. Salt to taste


  1. Heat 2 tbsp oil in a pan. Add hing, ginger and garlic paste, green chillies, turmeric powder, chilli powder and mix half mashed potatoes with lemon juice and coriander leaves. Vada stuffing is ready.
  2. For batter mix everything and keep aside for 15 minutes.
  3. For the green chutney, mix everything and grind it smoothly.
  4. For dry coconut chutney, mix everything and grind it. Saute this mixture for 30 seconds in 1 tsp of hot oil. Dry coconut chutney is ready.
  5. Dip one by one in besan batter. Fry them till golden brown and crisp. Take pav put green chutney on one side of the pav and coconut chutney on the other side. Place hot vada in slit pav as shown in the image. Enjoy.
