ABOUT My father's special Kheerni (Dry Fruit Kheer) RECIPE

My father used to cook this kheer on his mother's shraadh each year, for almost 40+ years. I made it just a few days back for the first time ever. It was emotional for we lost him in December 2014.

Ingredients Serving: 2

  1. 500 ml full fat milk
  2. 3 tablespoon Amul fresh cream
  3. 100 gm condensed milk
  4. 2 elaichi pods
  5. 2 tablespoon sugar
  6. 1/2 cup almonds and pistachios

Instructions

  1. Soak the almonds in boiled water for 5 minutes.
  2. Remove and put in cold water.
  3. This will make it easier to remove the skin.
  4. Chop the almonds and pistachios in long slivers.
  5. Take a heavy bottom pan on slow flame.
  6. Add the milk, fresh cream and elaichi pods.
  7. Let it simmer on low flame till it reduces to half quantity.
  8. Keep on stirring every 2 minutes so that it does not stick to the sides, bottom and burn.
  9. Add the condensed milk, sugar and cook for 5-7 minutes more.
  10. Lastly add the almonds and pistachios. Cook for a couple of minutes.
  11. Turn off the flame and let it stand for about 10 minutes with a lid on.
  12. Garnish with saffron strands.
  13. Remove the elaichi pods before serving it.
  14. Serve hot or chilled.
