Butter Chicken

Ingredients to make Butter Chicken

  • 1 medium sized chicken (800 gm) - cut into 12 pieces
  • For first marinade:
  • juice of 1 lemon,
  • ½ tsp chilli powder
  • 1¼ tsp salt, or to taste
  • For second marinade:
  • 1 cup hung curd
  • 2 tbsp cream
  • 1 tbsp ginger- garlic paste
  • 1 tbsp kasoori meth
  • ½ tsp black salt,
  • 1 tsp garam masala
  • 1 tsp degi mirch powder
  • 1 tsp dhaniya powder
  • For the gravy:
  • 1 tablespoon ginger Garlic paste
  • 500 gm of tomatoes blanched, Pureed and strained
  • 1/2 cup of readymade tomato puree
  • 1 tablespoon of cashewnut paste
  • 1 tsp garam masala
  • ¼ tsp sugar or to taste
  • salt as per taste
  • 1 cup milk
  • 2-3 tablespoon butter or ghee
  • cream for garnishing

How to make Butter Chicken

  1. Wash, pat dry chicken. Prick all the pieces with a fork on all sides.
  2. Marinade the chicken with lemon juice, salt and chili powder. Keep aside for ½ hour.
  3. In a another bowl, mix all the ingredients of the second marinade well.
  4. After half an hour, add chicken to second marinade and mix well. Keep aside for at least 2 hour or overnight in fridge.
  5. Pre - heat your oven at 200 degree centigrade.
  6. Bake the marinated chicken in the preheated oven for half an hour.
  7. Remove from the oven. Keep aside.
  8. For the Gravy:
  9. In a wok add ghee. Heat the ghee.
  10. Add ginger garlic paste, cook it for 1-2 minutes, until its color change slightly.
  11. Add pureed tomato, tomato puree and all the masala of the gravy.
  12. Cook it on medium heat till the raw smell of tomato goes.
  13. Add 1 cup of water and bring to a boil.
  14. Add in your tandoori chicken.
  15. Cover with the lid and cook it for 3-4 minutes.
  16. Add milk and cook it for another 2 minutes.
  17. Turn off the gas.
  18. Garnish it with cream.

My Tip:

Butter chicken taste good with naan or tandori roti.
