ABOUT Brinjal Potato Curry RECIPE

Aloo Baingan Curry is a recipe made with mix of vegetables like potatoes/aloo, eggplant/baingan and also using chopped onions and tomatoes to get gravy base.

Ingredients Serving: 4

  1. Oil 3 tablespoons
  2. Cumin seeds 1/4 Teaspoons
  3. Ginger garlic paste 1 Teaspoons
  4. Onions 100 Grams
  5. Tomatoes 100 Grams
  6. Turmeric 1/4 Teaspoons
  7. Cumin powder 1 Teaspoons
  8. Coriander powder 1 tablespoons
  9. Chilly powder 1 Teaspoon
  10. Salt to taste
  11. Eggplant 150 Grams (cubes)
  12. Boiled Potatoes 150 Grams (cubes)
  13. Coriander chopped 2 tablespoons

Instructions

  1. Heat oil in a pressure cooker add onions, salt, saute it and add ginger garlic paste, tomatoes, turmeric, chilly powder, cumin powder and coriander powder.
  2. Mix this and put the lid on and let it cook for 5 to 10 minutes on a low flame (4 to 5 whistles), use this gravy in many veg and non veg curries.
  3. Heat oil in a pan add cumin seeds, eggplant pieces, salt,mix it well and put the lid on, let it cook for 3-5 minutes till eggplant is tender.
  4. Add onion gravy and potatoes (boiled) cook for 5 minutes then turn off the flame, add coriander chopped. Serve this hot with roti, rice.
