Ingredients Serving: 10

  1. Desicated Coconut - 1.5 cups
  2. Nuts (mix of almonds, cashew and raisins) chopped - 1.5 cup
  3. Oats - 1/4 cup
  4. Jaggery chopped - 1/4 cup
  5. Cranberries - 1/4 cup
  6. Flax seeds - 1 tbsp
  7. Water - 1/8 cup
  8. Vanilla essence - 1 tsp

Instructions

  1. Dry roast the coconut, nuts and the oats.
  2. Add jaggery and water in a pan. Keep it on simmer and keep stirring until melted. Add essence to it and stir again.
  3. Meanwhile, line a 8*8 pan with parchment paper.
  4. In a separate bowl, mix the roasted nuts, coconut, oats, cranberries and flax seeds.
  5. Add this nutty mix to the liquid jaggery. Mix until evenly coated.
  6. Pour this mix into the prepared pan. Press it firmly so that all holds together.
  7. Let it sit in the refrigerator for 45 minutes. Bring it out and cut it into squares or bars.
