Ingredients Serving: 4

  1. 1.5 cups of atta (wheat flour)
  2. 3 large onions, finely chopped
  3. 4 tsp of coriander leaves, finely chopped
  4. 2 green chillies, finely chopped
  5. 4 Garlic cloves, finely chopped
  6. 1 tsp of cumin seeds, dry roasted and slightly powdered
  7. 2 pinches of ajwain seeds, dry roasted and slightly powdered
  8. 1 spn of chaat masala
  9. salt as per taste
  10. Water as required for kneading
  11. Ghee for frying

Instructions

  1. Finely chop onions, green chilies, coriander leaves and keep it aside
  2. Take flour and add salt, ajwain seeds, cumin seeds, onions, green chilies, coriander leaves, chaat masala and mix well. Mix well and add very little water, knead into stiff dough.
  3. Divide the dough into 8 even sized balls
  4. Roll each one with a rolling pin like a thick paratha and prick the Koki with a fork. This will ensure that Koki is properly cooked from inside.
  5. Heat the tawa & place Koki on this hot tawa. Cook on medium flame on each side adding a little ghee from sides, until small brown dots appear on surface (this will take a couple mins)
  6. Use a flat spatula to press Koki as this will help in cooking it from inside as well as to get a crisp texture. Cook till both sides are done with spots all over and nicely browned.
  7. Serve hot with Curd and Sindhi Papad
