Ingredients Serving: 4

  1. 2 tbsp Coconut oil
  2. 2 cup Boiled Rice (Boil Rice with salt)
  3. 1 cup grated fresh coconut
  4. 2 Onion sliced and deep fried in coconut oil
  5. 12 -15 Cashew nut fried (in coconut oil)
  6. 10 -15 Curry leaves (fried in coconut oil)
  7. 10 -15 Raisins
  8. 2 Red chilles
  9. 2 green chilly chopped
  10. 1 teaspoon mustard seeds
  11. 1 teaspoon Urad dal
  12. 1 teaspoon channa dal
  13. few curry leaves
  14. 2 tablespoon Coconut Oil for frying

Instructions

  1. Boil rice in plenty of water along with some salt and keep it aside.
  2. Deep fry sliced onions and keep it aside as well.
  3. Fry curry leaves and cashew-nut to be used later.
  4. Grate coconut also for later use.
  5. In a pan take 2 tablespoon of coconut oil, heat on a low flame and add mustard seeds.
  6. Add urad dal and channa dal, roast them for 30 seconds
  7. Add chopped green chilly and red chilly to this along with few curry leaves and saute it.
  8. Add grated coconut to this and cook for a minute
  9. Add half of the fried onions, fried cashew nuts, raisins and roast it.
  10. Add boiled rice to this, roast it nicely for a minute or two. Add fried curry leaves to this.
  11. Garnish it with fried onions, fried curry leaves and serve it hot.
