Ingredients Serving: 3

  1. Coconut Milk 1 cup (for cooking rice) & 400 gm for Chicken
  2. Basmati rice 1 cup
  3. Water 1 cup
  4. Salt to taste
  5. Boneless Chicken 500 gm
  6. Pepper 1 tsp
  7. V. Oil 1 tbsp
  8. Curry Powder 1 tbsp
  9. Onion finely thinly sliced 1/2
  10. 400 gm diced tomato
  11. Sugar 3 tbsp

Instructions

  1. For coconut rice- Wash n soak rice.
  2. Now Boil 1 cup coconut milk & 1 cup water.
  3. Now add rice and salt to taste.
  4. Let it cook on medium flame till rice is cooked nicely consuming all liquid.
  5. For coconut chicken- Marinate chicken with salt n pepper & keep aside.
  6. Heat oil in a kadai add curry powder and onion & fry it for a minute.
  7. Now add chicken and cook for 7-8 min on medium flame.
  8. Pour tomato, sugar and coconut milk and combine all.
  9. Let it cook for 35-40 min stirring occasionally or till chicken is done.
  10. Serve warm and enjoy.
