ABOUT JIBE GOJA RECIPE

Bengalis are known for their penchant for sweets. The immense variety, styles and popularity of Bengali sweets is well known. The following recipe of Jibe Goja is my mother’s recipe. It was the usual Sunday breakfast at home when I was young. While this one is certainly sweet, my mother also made a savory version of it and both were served together.

Ingredients Serving: 5

  1. 250 gms of refined flour (Maida)
  2. Refined oil for frying
  3. 1 cup of sugar
  4. A pinch of salt and sugar
  5. I 1/2 cups of water
  6. 2 Tbsp refined oil

Instructions

  1. Mix 250 gms of refined flour, 2 Tbsp refined oil, a pinch of salt and sugar. Add water little at a time to knead it into a soft dough. The dough should be soft but not sticky. Cover it & keep it aside for 30 minutes.
  2. Now, to make the sugar syrup. Take 1cup of sugar & 1 cup of water in a milk pan & place it on the gas stove. When the sugar dissolves & it starts boiling, switch off the gas.
  3. Take the dough, make small 25 (approx.) round balls out of it. Keep little oil & little refined flour in 2 separate bowls.Take one ball at a time, press it & dip a small portion of the ball in the oil & keep it on a clean slab.
  4. With the rolling pin try to give the ball an oblong shape.Smear a little flour & roll it again to make it little thin.
  5. Now with a sharpened knife make cuts on the oblong piece horizontally from one end to other, like stripes but keep the edges intact (See Picture).
  6. Immediately after making the cuts, start rolling the oblong piece from the base till the end. Press the ends on either side firmly.The finished piece will look like an oblong latticed pastry (See Picture).
  7. Put some refined oil in the frying pan & place it on the gas stove.When the oil is hot put it on slow flame. Put the pieces in the oil one by one, not more than 3 to 4 at a time. Fry it in a slow flame till light golden brown in colour.
  8. Take it out from the oil & place it on a sheet. After all the pieces are fried soak the pieces in the sugar syrup for a minute & take them out. Don’t put too many pieces at a time in the syrup. Enjoy the crispy sweetness of Jibe Goja!
