ABOUT Creamy Coconut - Night Jasmine Flower Rice RECIPE

Parijata, also known as GangaShiuli in Odiya & Night Jasmine in English is Lord Krishna's favorite flower. But using the flowers come into picture few years back I started using them and later i came across the various use of it. While Assamese add these to fish curry ,many used as a replacement of Saffron. Yeah ,they call it Poor Men's Saffron.

Ingredients Serving: 2

  1. 1 cup Jasmine rice
  2. 1/4 cup Flower stem
  3. 1/2 cup Thick coconut milk
  4. 1 tbsp Cashew nut
  5. 2 tbsps Raisin
  6. 1 tsp Green cardamom powder
  7. 1 tsp Sugar
  8. 2 tsps Clarified butter
  9. 1 cup Water

Instructions

  1. Soak rice for 5 minute. Heat ghee in a pan and fry cashew nut ,raisin for a minute. Take them out and fry the rice & flower stems for 2 minute in the same oil.
  2. Start boiling water .Once it reaches boiling point ,add rice along with flower to it.
  3. Let it cook for 5 minute. Add coconut milk ,sugar and cardamom powder .Cook for another 5 minute till they are done. Add fried cashew nut and raisin. Serve warm.
