ABOUT Tender Coconut Ice Cream (Eggless) RECIPE

Eggless "Natural's" style Tender Coconut Ice Cream that is both easy to make and quick as well.

Ingredients Serving: 6

  1. Tender Coconut Flesh – of 2 coconuts (Daab/Green coconut)
  2. Sweetened Condensed Milk – 1 can
  3. Fresh cream – 1 cup
  4. Powdered Sugar – 1/2 cup (optional)
  5. Fresh coconut water – 1 cup
  6. Toasted coconut flakes – for garnish

Instructions

  1. Remove the soft white flesh (malai) from the coconuts and chop. Place them in a blender jar, with the condensed milk, powdered sugar and coconut water.
  2. Give it a quick whiz and add the fresh cream. Now blend the mixture, but don’t make a fine paste, let the paste be slightly coarse.
  3. Take a freezer-proof plastic container and pour the ice cream mixture into it.
  4. Cover with air-tight lid and freeze for 2 hours. After 2 hours, blend the semi-frozen ice cream again.
  5. Repeat process and pour into container again. Ensure it is air-tight, and let ice cream freeze for 10 to 12 hours.
  6. Scrape some fresh coconut flesh and toast it in the microwave or on a skillet. Sprinkle over ice cream just before serving.
