Coconut Rice

Ingredients to make Coconut Rice

  • jeera samba rice – 3 cup
  • cashew nut – 1/4 cup
  • bay leaves – 2 no’s
  • cloves – 6 no’s
  • cinnamon – 4 to 5 no’s
  • Elachi – 2 no’s
  • coconut – 1 big part/1 big bowl grated
  • salt to taste
  • Oil/ghee to fry

How to make Coconut Rice

  1. Take a mixer jar, add coconut and grind to a fine paste by adding sufficient water and keep ready.
  2. Heat a casserole by adding oil/ghee in it, when oil becomes hot, add bay leave and spices. Saute until you get a nice aroma for one minute.
  3. When it begins to splutter, add cashew nuts. Stir fry till it turns to golden brown in colour (do not over fry).
  4. Rinse jeera samba rice and drain the water, add it and fry for a while.
  5. Add in ground coconut paste and mix together.
  6. Add 5 1/2 cups of water for 3 cup of rice, add salt to taste.
  7. Bring it to a boil. When it begins to boil, cook on a low flame, close the lid of the casserole for 15 minutes, stir in between once or twice till it is done.
  8. When rice is done turn of the flame, transfer the dish to a serving dish and enjoy the dish with veg or non veg korma or curries.
  9. Aromatic, delicious coconut rice is ready to be served with any spicy curry.

My Tip:

Jeera samba rice is a flavored rice which makes a aromatic rice dish, adding coconut makes the dish more yummy.
