Lady's finger in coconut milk

Ingredients Serving: 4

  1. 200 gms lady's finger
  2. 1 onion chopped
  3. 1 tomato chopped
  4. 1 green chilli
  5. 2 inch ginger chopped
  6. 1 spring curry leaves
  7. 2 tsp coriander powder
  8. 1/4 tsp crushed pepper
  9. 1/4 tsp turmeric
  10. 1 tsp red chilli powder
  11. 1/4 tsp black mustard seeds
  12. 3 cups coconut milk
  13. Salt to taste
  14. Oil 5-6 tsp

Instructions

  1. Wash and cut the lady's finger into small pieces.
  2. Heat a kadai, add 2-3 tsp oil and fry the lady finger for 5-7 minutes or until cooked. Remove and keep aside.
  3. Now take another kadai and heat 2 tsp oil. Add in mustard seed and let them splutter.
  4. Add chopped onion, green chilli, curry leaves and ginger. Saute and fry until fragrant.
  5. Now add salt, turmeric, red chilli powder, coriander powder and pepper powder. Saute and fry until fragrant.
  6. Add the chopped tomatoes and cook until tomatoes become soft.
  7. Add 2 cups of coconut milk and bring it to a rolling boil.
  8. Add the lady's fingers and cook for 2-3 minutes on a medium flame.
  9. Now pour the third cup of coconut milk, give a stir and turn off the gas. Cover with a lid and leave it aside for 5 minutes.
  10. Remove the lid, give a stir and adjust the salt.

It was very delicious! I never expected that the curry would taste so good with so minimal masala ingredients. To increases the quantity, I made a slight change in the recipe; instead of coconut milk I added ground coconut itself.
