ABOUT Tomato Lauki Chutney - A Lip Smacking Delight RECIPE

Sweet and spicy tomato chutney is a favorite in most Indian homes. In fact, chutneys with or without tomato are loved by one and all. But this spicy tomato chutney is unique in more ways than one. The sweet tomato chutney recipe includes a secret ingredient that you would all love to experiment with! Try it once and you will be on cloud 9 for having served something so healthy and delightfully lip-smacking to your loved ones.

Ingredients Serving: 4

  1. 2 tomatoes
  2. Equal amount of bottle gourd (Lauki)
  3. 1/4 tsp - roasted and powdered fenugreek seeds
  4. Salt as per taste
  5. 2 fat pinches of sugar
  6. 2 pinches of hing (asafoetida)
  7. Mustard seeds as per taste
  8. 1 tsp oil
  9. Fresh coriander leaves (Optional)
  10. Green chilli/ red chilli as per taste

Instructions

  1. Cut lauki into small pieces. Keep aside in hot water for 5-8 minutes.
  2. Add whole tomatoes to the hot water along with lauki.
  3. Remove both and let them cool for a couple of minutes.
  4. Add lauki and tomatoes to the food processor along with green chilli or red chilli. Run the grinder until you get a pulpy mixture.
  5. Keep this paste aside.
  6. Heat oil in a pan.
  7. Add hing and mustard seeds to the hot oil. Let them splutter.
  8. Throw in the tomato-lauki mixture and saute it for 3-4 minutes.
  9. Add salt and sugar. Mix well
  10. Before turning off the flame in about another 2-3 minutes, add roasted and powdered fenugreek seeds.
  11. Mix everything well. Turn off the flame.
  12. Garnish with fresh coriander leaves.
  13. Enjoy with rice, roti, idlis, dosas, or parathas.
